4-6 ounce fish , one per person
salt, lemon pepper, paprika , cooking olive oil mix
mango, pineapple, cilantro, tomato, lemon juice ,corn starch, juice
Sear fish on both sides with salt and lemon pepper, sprinkle paprika for added color for about 3 min on each side , finish in oven for another 5 or until fish is cooked , do not over cook.
combine diced small pineapple , tomatoes, mango and cilantro and mix over with lemon juice . Serve over the fish .
Make a sauce out of , mango juice, orange juice, or pineapple juice combined with lemon juice , thicken with corn starch to make a sauce/glaze, chill pure over your salsa and fish enjoy .
tip . to add color to you glaze add few drops yellow color .
