2 egg yolks
2 T vinegar
1 1/2 cup oil
2 T lemon juice
1t mustard
Mix dry ingredients first, add vinegar,add oil gradually in small amounts and mix constantly. As mixture thickens get it thin with venigar or lemon juice . Alternate with adding oil with venigar or lemon juice untill it’s easy to stirr.. continue until the process is done . For larger quantities increase on ingredients . Keep it refrigerated
Adding to much oil will curdle the mixture, you can fix that by adding more egg yolks.
Have all ingredients chilled before used
Not only a wood spoon works as has been said before. All metal, silver forks are to be used as well .
