Best dishes to cook in order by the material compound
Cooper. Good dishes of conducting and retain heat. Can be expensive and react with accidic foods . Not good for food storage .
Aluminium. Best after cooper, conduct heat fast and is most use in commercial kitchens cause are light. Not good for storage of food since can react with accidic foods and change color.
Stainless steel. Low heat conductivity, durable, do not react with food acidity.
Cast iron. Good for high temperature, very heavy and will rust if not getting propper attention.
Glass. Very poor heat conductivity, can break and the temperature of dish is not precisely controlled
Enamel. Should not be use in special in commercial cooking since may chip or crack. Contain chemicals what can be released at high temperatures in foods that can create poisening. Not good for storing food.
