6 ripe cooking bananas
2 medium onions, finely chopped
2 small hot peppers, finely chopped
1 teaspoon salt
1 cup vinegar
1 cup sugar
1 tablespoon cinnamon
1 tablespoon allspice
1 piece clove
red food coloring
water as needed
Boil bananas and mash to a puree
Combine mashed bananas with the rest of the ingredients with exception of food color and water. Cook until onion gets soft, strain and add food color and water to control color and consistency , chill and serve….impress your guests
Interesting recipe. guess it’s a good/different way to use up any bananas going bad instead of the usual banana bread.
