This is a vanilla cupcake with black berry cream cheese frosting. This makes 12 cupcakes.

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon fine salt
  • 2 large eggs
  • 2/3 cup sugar
  • 1 1/2 sticks unsalted butter
  • 2 teaspoons pure vanilla extract
  • 1/2 cup milk

In a bowl mix all of your dry ingredients and set aside. In another bowl beat butter til creamy, then add sugar and vanilla and beat til smooth add eggs one at a time. Once well incorporated add dry ingredients alternating with the milk until well combined. Add batter to your prepared cupcake pan and bake at 350 for 20 min. For the frosting beat 4 Oz of cream cheese and 2 tbsp of butter until creamy, add teaspoon of vanilla then start gradually adding 2 1/2 cups of powder sugar until well combined and smooth. I used the juice from my blackberries to color my icing. Make sure all your ingredients are at room temperature when baking to get the best results. Ice the cakes and enjoy! 😊
