Zuppa toscana

  • 1 lb Italian susausage
  • 6 cups of chicken broth
  • 1 cup of heavy cream
  • 1 medium onion
  • 2 garlic cloves
  • 1/2 teaspoon of salt and pepper
  • 1/2 Red pepper flakes (optional)
  • 1 cup kale
  • 3 to 4 small yellow potatoes

Brown sausage the  transfer to plate lined with a napkin. in pot cook onion with olive oil until translucent add garlic cloves and cook until fragrant. add broth and bring to boil. add potatoes and cook until tender. stir in sausage and kale cook until the kale wilts. add your salt and pepper and chili flakes. stir in cream and simmer for about 2 mins. serve with some baguettes.
