Pumpkin spiced cookies with a cream cheese frosting drizzle.
- 2 1/4 cup flour
- 2/3 sugar
- 2/3 brown sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon pumpkin spice
- 2 eggs
- 1/4 cup coconut oil
- 1 teaspoon vanilla
In a bowl mix all your dry ingredients set aside. in a mixer beat sugar, brown sugar and coconut oil beat until smooth and well combined add eggs one at a time beat until well blended. stir in vanilla. on low speed gradually add dry ingredients until well combined. Now your ready to bake drop dough on a cookie sheet and bake at 375 for about 10 to 12 minutes.
Cream cheese frosting
- 1 cup powdered sugar
- 8 oz soften cream cheese
- 1 teaspoon vanilla
- 1/4 cup coconut oil
In electric mixer smooth out the coconut oil. beat in cream cheese until smooth. gradually add sugar until smooth and lump free. stir in vanilla. place in a piping bag to decorate your cookies. that is once the cookie is cooled completely.
Side note, I was out of butter and found coconut as a great alternative.
