Everybody loves a flavorfull moist turkey on thanksgiving. Since turkey is a lean meat and theres not much fat to keep it juicy during the cooking process a good brine can help you from getting a dry bird. During brining, the turkey absorbs extra moisture, which in turn helps it stay more moist and juicy both during and after cooking. The turkey absorbs salt along with the water,  the salt helps to break down some of the turkey’s muscle proteins, that  helps with the overall moisture absorption.
