1/2 cup grated gruyere cheese

1/2 cup ricotta cheese

1/4 cup crumbled gorgonzola or blue cheese

2 Tbsp. freshly grated Parmesan cheese

2 Tbsp. chopped fresh dill

1 large egg yolk

2 Tbsp. extra-virgin olive oil

2 10 oz. packages of fresh spinach

1/4 fresh chopped garlic cup

Mix all the cheese,dill and the egg until creamy and set aside .

In a skillet sauté spinach with garlic until cooked, strain then fold in the olive oil. Place spinach in a backing dish and cover with the cheese mixture, bake until golden brown. You can use the broiler for faster cooking .

This dish can serve 4 and have only a total of 24 carbs
