When cooking with oils or just topping a salad a good way to add flavor its making an oil as following

olive oil,  fresh branches rosemary, peppers

bruise rosemary and peppers gently by rubbing between the fingers or a knife. Place it in a jar with a tight lid, add olive oil to cover the rosemary and peppers. Keep the jar air tight at room temperature for 10 days than drain and use for cooking or salads

This process can be done with almost any herb, vegetable combination think of basil, fresh bay leaf mint …

Tip. Olive oil smoking point is low, therefore isn’t good for fraying or long cooking processes Replace olive oil with sunflower seed oil which can stand up to 400F
